Crispy Jerusalem Artichoke Chips

Jerusalem Artichokes
Oil for frying
Salt
Method
Properly clean the jerusalem artichokes, brush them with a sponge (no need to peel)
Slice your Jerusalem artichokes into thin slices. I used a mandoline for even, thin slices, but you could also use a Y-peeler or a knife.
Dry the slices in a kitchen towel.
Then deep-fried in oil at 160-180 °C for 2-3 minutes (until they are lightly golden).
Finally, place the chips on kitchen roll and sprinkle with salt.
Let them cool down, and they are ready to serve.
